Fully straightening the interior of a house including walls, ceilings, and floor, takes about 5-7 days per floor, for a 600-800 sf house

No.  This is one advantage of the reddiwerx technique--it can work around them, saving time and money.

During renovations of a certain scope, the framing often can't be removed.  If only doing one floor of a house, or if the house is semi-detached and has common party walls, the framing needs to stay in place and repaired rather than replaced.
